Double Chocolate Vegan Mug Cake

Ingredients:

2 TBS all purpose flour

2 TBS Coconut Cloud Original Hot Cocoa Mix

2 TBS sugar

1/8 tsp salt

¼ tsp baking powder

1 TBS melted coconut oil

2 TBS nut milk

1 TBS espresso or left over (room temp) coffee  *this enhances the chocolate flavor!

½ tsp pure vanilla extract

2 TBS vegan/dairy free chocolate chips

 

Directions:

Add the flour, Coconut Cloud hot cocoa mix, sugar, salt and baking powder to a mug. Stir or whisk to combine

Pour the coconut oil, nut milk, coffee, and vanilla into the mug with the dry ingredients and stir well with a fork. Sprinkle the chocolate chips on top.

Microwave for 40-50 second until set. If you like it a bit gooey in the middle, start with 40 seconds and then do 10 second increments from there to achieve your desired doneness.

I also like to sprinkle some extra chocolate chips on the top at the end for added texture and even MORE chocolate.

Devour immediately!
