Pumpkin Spice Overnight Oats (Vegan, Gluten-Free)


Out of nut milk? Use Coconut Cloud dried coconut creamer to create coconut milk for your favorite recipes! Here’s one of our favorites, Pumpkin Spice Overnight Oats!



  • 1 cup Trader Joe’s Gluten Free Rolled Oats

  • 1 cup hot water mixed with 4 TBS Coconut Cloud Vanilla Creamer mix

  • 1/2 cup pumpkin purée

  • 1 tsp chia seeds

  • 2 tsp honey

  • 1 tsp vanilla extract

  • 1/2 tsp cinnamon

  • 1/4 tsp nutmeg

  • 1/8 tsp ground cloves

  • A pinch of salt

  • Sliced banana


  1. Combine the oats, Coconut Cloud coconut milk, pumpkin purée, chia seeds, honey, vanilla, spices, and salt in a large bowl. Stir together until well combined.

  2. Transfer mixture to two 8-ounce mason jars, seal, and refrigerate overnight (or at least 4 hours).

  3. When ready to serve, top with sliced bananas and a drizzle of honey! Enjoy!
